Blueberry Smoothie


A scrumptious, tempting smoothie recipe even I can eat. Er, drink. 

As the charming and talented Russell Crowe likes to say, *Blank* me swingin'. Because here's the deal. Turns out your humble gluten-free goddess not only has to be gluten-free but dairy-free as well. And egg-free. And lemon-free. And almond-free. And soy-free, and... Well, you get the idea. I won't bore you with all the -frees I gotta be.



So what does a brave and spunky-flirtatious girl do when she is suddenly starving and her whistling care-free husband is scrambling up some eggs and cheese for brunch?

You reach for your power tools. 


You haul out the Waring professional blender and thank your twinkling stars you have a bag of frozen blueberries in the freezer. You check the rice milk label for sunflower oil (now ubiquitous in gluten-free foods). You dip into the rice protein powder. You smile slyly. You sprinkle in some stevia. You switch the button to HIGH and sigh.

You froth with pleasure.


Vegan Blueberry Smoothie Recipe


Get your protein fix the vegan way. Zap yourself a smoothie with gluten-free rice protein powder and organic frozen blueberries. Antioxidants never tasted so good. And yeah, It's hypoallergenic [for this gluten-free goddess, at least]. Change ingredients accordingly to suit your own allergenic persuasion.

For one smoothie:

3/4 cup ice cold gluten-free vanilla rice milk
2/3 cup frozen blueberries- organic, if possible
2 tablespoons MLO Rice Protein Powder
1 serving Stevia with fiber [Stevia Plus]*

Combine ingredients in a Vita-Mix or blender container. Cover tightly. Whip until smooth and frothy. Pour into a fancy glass. Feel fabulous.

Karina's Note:

Not a stevia fan? Add a teaspoon of agave nectar, or two teaspoons raw sugar, to taste.

I enjoy reading your blog, and thought that I'd pass along a recommendation to you since you have made another dietary shift.

If you want to satisfy your sweet tooth, you may want to check out "Vice Cream" by Jeff Rogers. The recipes are vegan and have maple syrup or dates as the sweetener in most of them. I have dairy loving friends who pass regular ice cream by for the frozen creations I turn out using vice cream recipes. Many use cashews as a base, but there are also coconut milk based vice creams like the coconut cherry.

Karina, that's quite the list of allergies. I know you can work around them. It'll take time to get used to it, but I'm sure you'll come up with some yummy eats.

Oh dear, that IS a list. My husband has one line that too and the rest of the fam has their own so I can sympathise.

Have you tried coconut flour? You'll have to use it with egg replacer.
Check out www.niulife.com. I'm sure there would be an American supplier somewhere.

Hey there Karina,
I'm so sorry you have to deal with this. Out of curiosity, are these actual food allergies or just intolerances? Can you eat them never or occasionally in small amounts? Did you find out about these via blood tests or via alternative tests like muscle testing, NAET or those other tests that chiropractors and naturopaths sometimes do? How are you feeling about this news these days? Hang in there, dear - This could be an opportunity for you to create a new relationship with food.

A healthy journey on the right foot! Yes, I think coconut milk may well save the world.

When a very dear friend of mine became allergic to both soy and dairy, she found that hemp seeds can be a wonderful source of protein. I have been compiling hemp seed recipes here not all of them will suit your diet, but many can be adapted. Are sesame seeds OK? The stuffed vegetables are just great without the cheese.

Oh, I'm so glad you're back posting yummy things! I thought we had it bad with no cows milk, soy, eggs, shell fish, peanuts, pecan, walnuts and gluten. I do have a soy, gluten, dairy and egg free chocolate cake recipe that is to die for. If you're interested let me know. Thanks for the smoothie, it's exactly what this summer was lacking.

Sorry for what you are going through. I make a banana version of your smoothie. I use rice milk, cold ripe bananas & a couple of ice cubes. Beautiful photo. Love blueberries.

I know it seems impossible but now that I don't eat most of those items and more I just go with it...I mean no disrespect but the knowing is what is the joy in all this discovery. When you didn't know you thought you just had celiacs and while that is enough of a burden to shoulder, knowing is what in the long run will deliver you into feeling the best you can feel. You are already creative so that is a plus as well.
Chin up...take the plunge...I KNOW you can do it. HUGS and LOVE.

Hey Karina. I just stumbled across your site and want to share that I, like you, have had a history of food allergies and suffered many, many years from it. Not only feeling miserables, but I started to get horrible cystic acne and tried to troubleshoot it. It started with corn allergies (who would have guessed? It's in everything too!) and then found out I'm allergic to gluten, then soy and now dairy. And somehow..you just get used to it. You realize food is your medicine like you said before and you just roll with it. I admire your determination to creatively make sure all the food allergies do not wear you down. karina, with all your allergies, have you thought about getting "allergy elimination" treatments done? many find they are able to eventually add back in much of what they were previously intolerant to.
