Awesome potluck brunch list! I'm not supposed to have the eggs, but if I bring it for a crowd I can get a little taste without having a whole pan to eat.
I made your Big Banana Muffins last night. We slept in this morning, by the time we got up, my 8 year old son (in growth-spurt mode) had eaten three of them! Talk about a recommendation! Now I'm about to make more so we can both have breakfasts this week.

Hi Karina!

If you were going to make one of your beautiful frittatas or quiches dairy-free, how would you compensate for the loss of flavor/savoriness that the cheese imparts? I am thinking of using coconut milk or plain coconut milk yogurt instead of the milk/cream/half-and-half, but would appreciate some suggestions for replacing the cheese.

M~ I'm not sure a cheese sub is vital- or that it would work with coconut milk (which I think of as rather sweet and distinctive). I'd almost be tempted to go the curry route instead, and make the pie with Thai flavors.

Of if you're going for an Italian flavor with peppers, tomatoes, potatoes, just up the basil.

I'm working on a vegan frittata kind of pasta pie now and I'm using nutritional yeast, but I'm not sure the flavor of nutritional yeast would blend with coconut milk.

Do you have a particular quiche in mind?
