Blueberry smoothie- dairy-free gluten-free chill.

Wilting from the heat? I've got a deep blue chill for you. Dairy-free. Easy as pie. Cool as a blueberry. I'm emancipating this recipe from the archive depths because it's just too luscious to get lost in 2007, never to be slurped again.
What does a brave and spunky vegan girl do when she is suddenly famished and her Crowded House
whistling husband is scrambling up some free-range eggs and cheese for brunch? I'll tell what you do.
You reach for your power tools.
You reach for your power tools.
You haul out the Vita-Mix
and thank your twinkling stars you have a bag of organic frozen blueberries in the freezer. You grab the carton of organic almond milk
. You dip into the Nutribiotic vanilla rice protein powder
. You smile slyly. You sprinkle in some stevia
.
You switch the button to HIGH and sigh.
You froth with pleasure.

Vegan Blueberry Smoothie Recipe
Get your protein fix the vegan way. Zap yourself a smoothie with gluten-free rice protein powder and organic frozen blueberries. Antioxidants never tasted so good. Change ingredients accordingly to suit your own allergenic persuasion.
For one smoothie:
3/4 cup ice cold gluten-free almond milk or soy milk
2/3 cup frozen blueberries- organic, if possible
2 tablespoons Nutribiotic Vanilla Rice Protein Powder
1 serving stevia, or agave, to taste
Instructions:
Combine ingredients in a blender
or Vita-Mix
container. Cover tightly. Whip until smooth and frothy. Pour into a fancy glass. Sip.

Not a stevia fan? Add a teaspoon of low glycemic raw organic agave nectar, or two teaspoons raw sugar, to taste.

ReplyDeleteHave you tried coconut flour? You'll have to use it with egg replacer.

ReplyDeleteSorry for what you are going through. I make a banana version of your smoothie. I use rice milk, cold ripe bananas & a couple of ice cubes. Beautiful photo. Love blueberries.

ReplyDeleteHey Karina. I just stumbled across your site and want to share that I, like you, have had a history of food allergies and suffered many, many years from it. Not only feeling miserables, but I started to get horrible cystic acne and tried to troubleshoot it. It started with corn allergies (who would have guessed? It's in everything too!) and then found out I'm allergic to gluten, then soy and now dairy. And somehow..you just get used to it. You realize food is your medicine like you said before and you just roll with it. I admire your determination to creatively make sure all the food allergies do not wear you down. ReplyDeleteLooks so yummy! I've heard, though, that rice protein powder is a bit gritty ... did you have to blend it extra long or is that particular rice protein not super gritty? :)
ReplyDeleteReally close to my normal morning smoothie! I skip the protein powder and stevia (it is sweet enough if you use local berries and ripe bananas) - I add a tablespoon of ground flaxseed and a half a banana.
ReplyDeleteWith local blueberries coming on, I will find a local farmer with some really nice ones, buy several quarts and flash freeze.
When bananas start to get too ripe on the counter, I peel, cut in half, wrap in wax paper and freeze. My smoothies are more like milk shakes and stay cold if I take them in the car.

ReplyDeleteHey Karina! Thanks for the suggestions. I did notice that my header looks a little off. I totally agree with your suggestions, but I think the issue maybe the uploading? I am not sure because in Photoshop the image looks fine, and then when uploaded to Blogger it looses its color and sharpness. I've never had problems before with my headers, and had one for a long time that I made the same way and it uploaded fine. Hmm!

Not only have the hubs & I been withering in the heat but we've been craving something such as this to quench our summer thirst - and we can't do dairy. We just this weekend bought a small chest freezer so that we could keep lots of summer fruits on hand, frozen & waiting for just the right recipes. Karina, you are PERFECTION itself for continuing to supply us with all these goodies - even ones you resurrect from the archives :>]] THANK YOU!!!!!

ReplyDeleteKarina, this looks so delicious! I am curious how well you like that rice protein powder - I have recently tried a hemp powder and it doesn't like my tummy so well. Is this gritty? I would assume not, given your dislike for rice flours in baking due to gritty texture. :)

ReplyDeleteI've tried a couple of protein powders- and the best tasting, most "invisible" is the Nutribiotic vanilla rice protein I mention above. It dissolves almost instantly. I barely detect it. If you are super sensitive to texture, just make sure you have enough going on in the smoothie- a frozen banana, other fruit, flavors- and whip it long enough to give it a chance to dissolve. I use a Vita-Mix.
I've been doing smoothies daily. So good! xox
