I thought I'd reprise this important post (and fabulous muffin recipe) from a year ago- when the gluten-free community was buzzing from insults on every side. Consider this my UNapology for living gluten-free.

April Fools Day looms. But you won't find any tricks up my sleeve. Unlike the greater, broader world beyond my kitchen that apparently harbors a few individuals contemptuous of living gluten-free. This was a tough week to be a celiac. Assaults ranged from the merely mean-spirited to the stunningly ill informed. There was the alleged chef in Colorado (I say alleged, because it turns out this nudnik may have actually been a waiter) ridiculing gluten-free diners (the term he favored was "idiots") and crowing on Facebook that he passes off regular pasta as gluten-free (join the lively discussion here). There was the Dr. Oz show calling gluten-free a "fad diet", asking is it "just a myth?" (in full disclosure, I believe he meant as a weight loss tool, as a certain gluten-free celebrity has been claiming in her g-free book- ironically, featured on Dr. Oz last year). And finally, there was a famous food blogger-turned-author whose foodie envied blog-to-movie deal has apparently not cultivated much compassion for those of us stricken with gluten sensitivity. She barked on Facebook, "If I have to read one more thing about going gluten free I'm going to stomp on someone's face." And more than one person agreed with her. One of her fans (a food blogger) added, it's "too precious".

Strap on your helmets, Campers. There's not a lot of love out there.

I know this. You know this. Some of you have even shared stories about not only eye-rolling waiters and could-care-less food preparers, but family members sneaking gluten into what they feed you, just to "see what happens". Just to test you.

Let me repeat that.

Family. Feeding you gluten. On purpose.

No wonder strangers feel they can openly spout contempt. If we are not respected within the bosom of our own clan, our flesh and blood, how can we expect random strangers to care?

The truth is, they don't.


Until their child gets anemic for no apparent reason. Or their young wife breaks a hip. Or their mother shrinks to skin and bones before their very eyes. Then it becomes interesting. Then the mystery becomes worthy of their attention. And they start asking questions. What is that disease called, you know the one where you can't eat bread? 

Celiac disease is sadly under diagnosed. Millions have it and don't know it. And that translates to an epidemic of silent suffering- a lot of mysterious malnourishment, anemia, and osteoporosis. A lot of migraines, depression, infertility, and blistery skin rashes in unmentionable locations. A lot of bloating and Pepto Bismol chugging. But hey.

We know you don't want to hear about it.

So forgive us, please.

Forgive us for living with a autoimmune disease whose only cure is a gluten-free diet. Forgive us for focusing so much on food- our only medicine. Our breakfast, lunch, and dinner. Our daily bread. Forgive us for asking questions in restaurants. Forgive us for feeling awkward at social events where food is ubiquitous, and family parties, where your disbelief and denial can make us sick for three days.

Forgive us for getting excited when a new recipe works, and our daughter can eat a chocolate chip cookie that isn't going to make her ill. Forgive us for sending our son to school with gluten-free vegan cupcakes for the class. Forgive us for wanting our children to feel like they belong and contribute.

Forgive us our passion for gluten-free food that fills our bellies and lightens our souls. Just a little.

Because to those of us who must live gluten-free- every day of our life- food is no small thing.

Food is precious.

Birthdays are complicated when you reach a certain age. Oh, don't get me wrong. You're grateful for another year. I mean. You're still alive and kicking, right? Waking up to a fresh start. Starting a spanking new year on the planet with one more number under your (slightly pinching) belt. A number that grants you a whisker more authority in the world. A tad more wisdom.

If you've been paying attention to the lessons life likes to offer up as experience, and not sleepwalking, that is. Not acquiescing to the expectations of others. Or choosing safety over the challenge of the new. Or worse- finding yourself somewhere, in some situation, or relationship, strictly for the sake of momentum, chafing inside a role you don't remember signing up for.

Birthdays can be markers like that.

Defining where we've been. And how far we've come. Or not.

It was my husband's birthday this weekend. And yes, I baked a cake. And as I stirred the batter and scooped it into cake pans, I thought about the other cakes I have baked for him. The chocolate cake in our first year of marriage. Children beneath our roof. Blue balloons and candles. The newness of each others' dreams. The shine of our ideas. The belief in what was possible.

Sometimes you just need a treat. A recipe with coconut and chocolate. After all, you've been so good. You've been munching fresh veggies and brown rice. You've been slurping healing soup with cabbage and drinking green tea. You've been diligent checking labels for gluten, casein, and soy. So it's time for something sweet. Something moist and chewy and perfect with a cup of tea.

Egg-free baking is tricky. And at high altitude, even trickier. Truth be told, I've tossed a dozen egg-free experiments into the trash this summer. But these little vegan gems?

These were keepers.


Coconut Chocolate Chip Cake- An Easy Gluten-Free Recipe

This is one of my most popular gluten-free cake recipes- a divinely simple gluten-free coconut cake studded with chocolate chips. And so easy to make if you keep Pamela's Ultimate Baking and Pancake Mix on hand. We are leaving for Los Angeles on Friday and Yours Truly in Gluten-Free Goodness will be off-line for a bit. I thought I might leave you with something sweet to nosh as I prepare for our much anticipated sojourn into Hollyweird.

A simple recipe. No fuss. No frosting. Cake for those of us who aren't gifted with ganache. The kind of cake you can grab on the go (how very un-Zen!) or nibble politely over coffee and a hot flash inducing debate with friends about why naturally beautiful, smart and talented women inject military grade toxins into their foreheads and goddess-knows-what into their lips and bursting apple cheeks until all you can do, Dearest Reader, is stare in frozen horror wondering, What the Tap-dancing Hades have you done to your face?

Please, women. I beg you. Stop.

Your once expressive faces (your numero uno tool of the trade in theater and film) now look like masks or worse. You look like a sky-diving plastic blow-up doll. You do not look younger, I'm sorry to tell you. You look weird. Vacuous. If not desperate. There's an uncanny vinyl aura oozing from a visage that's had "work done" (I guess the new phrase is "been refreshed").

Trust me. Be strong. Be authentic. Think: What would Frances McDormand do?

And go eat some cake.

I ask you. What beats coconut and chocolate in a cookie recipe- especially if they happen to be gluten-free? Coconut and chocolate and macadamia nuts.

Okay, I confess. My all-time favorite cookies in those innocent pre-gluten-free days were not some hoity-toity gourmet bakery confection but those bagged big and bumpy Pepperidge Farm chocolate chunk cookies you could get in any East Coast grocery store. Yup. If memory serves me well, my go-to favorite featured coconut and chocolate. They might have been called Sausalito. Or some such California-evoking moniker.

In our quest to tweak one of our favorite dessert bar recipes this week my cookie-making husband and I came up with a chocolate chip coconut cookie bar that tastes an awful lot like those beloved crunchy-chewy Pepperidge Farm gems. We didn't happen to have any macadamia nuts on hand- but if we did I would have added some to the recipe.

And for those of you who loved dunking those Pepperidge Farm Nantucket Cookies into a glass of ice cold milk- Babycakes, these are dunk worthy.

Ah. Savor this Maui Wowee goodness- a delicious coconut chocolate chip cookie bar recipe. But first, a little back story. I remember the first gluten-free cookie I ever ate. I was a week into this new gluten-free lifestyle, knowing- by my body's dramatic response to giving up gluten- I was on the right track. I was feeling hopeful, deprived, relieved, angry and curious all at once.

So, Dear Reader, I took my first bite.

The store-bought cookie tasted like dog biscuit dust. Like a thawed frozen pizza box whizzed in a Cuisinart. Like a stale corner crumble from last year's abandoned Christmas cookie tin from your aunt that can't cook and pontificates about politics over instant coffee, Sara Lee pound cake and her gently crushed pack of Virginia Slims.

My husband and sons felt sorry for me (though they masked it with humor, tossing cookies out the back door into the night like so many flying hockey pucks). The worst of it? They felt powerless to help.

That's when I knew.
