Quinoa Summer Stir-Fry

Easy. Easy. Easy.

Trying to find a Los Angeles sublet for the summer- within our budget- is as slippery and twisted as charting Madonna's romantic liaisons post Guy Ritchie. It's a serpentine endeavor, this whole reading between the lines thing, deciphering what is true and what is only mostly true. It's all those key buzz words peppering Craig's List and Westside Rentals. "Convenient to the 10" can mean the eastern bedroom window sucks in freeway exhaust during rush hour. "Pet friendly" might translate to everyone in the building works all day and leaves their poor pooches to yap and woof until the cows come home. Which, as we all know, in LA is after sushi and mojitos.

"Cozy studio" can mean cute and comfy or it can mean as cramped and tight as a walk-in closet. Not Madonna's closet(s). I'm sure hers are bi-coastal and coordinated by era, each epoch's collection larger than our entire casita. We're talking my closet here. The five foot black hole currently crammed with winter parkas, too many mismatched socks to count, and the book-filled boxes I'm storing for this alleged, yet-to-materialize summer getaway.

And the price for the privilege of said 150 square feet of space in Venice Beach?

If you have to ask, Darling, you can't afford it. Which as it turns out, is a moot detail anyway, because no one on Craig's List ever answers your e-mails (especially when they notice your out of town area code). So here we sit. Grazing the Internet till the migraines kick in, picking through rentals beyond our budget, hoping for an affordable hidden gem amongst the inflated glut of summer housing in Los Angeles. Unless we're looking for a roommate. We could afford one room. Shared bath. With a UCLA student.

So what am I cooking during all this rental drama, you impatiently ask as I ponder our next move?

That would be quinoa.

Easy Quinoa and Summer Vegetable Stir-Fry Recipe

Recipe posted June 2009.

This easy, toss together quinoa is fabulous hot from the pan. But it's also delicious cool, as a quinoa salad. So make more than you think you'll need and you've got picnic food for the next day. When you'd rather take a walk than scour the Internet and don't feel like cooking.

First:

Make your quinoa, the easy way. In a rice cooker. Here's the quinoa recipe. You'll need roughly 2 1/2 cups cooked quinoa.

As it cooks, gather and cut up your summer vegetables.

Ingredients:

Olive oil

1 onion, diced
3-4 cloves garlic, chopped
1 yellow summer squash, sliced
A fistful of slender asparagus or green beans, trimmed, sliced
1 Japanese eggplant (small eggplants are way less bitter), peeled, sliced into bite size pieces
1 bell pepper- red, yellow, orange or green, cored, sliced
2 cups Baby Bella mushrooms, trimmed, sliced
A handful of grape or cherry tomatoes, halved
Sea salt and ground pepper
Herbs, to taste- parsley, basil, thyme, red pepper flakes- whatever you prefer
1 tablespoon balsamic vinegar
Extra virgin olive oil, to taste

Instructions:

When the quinoa is almost done, heat a splash of light olive oil in a wok or large skillet over medium heat. Add the onion, stir until translucent. Add the garlic and cook for a minute. Add the remaining vegetables. Season with sea salt, pepper, and herbs. Add the balsamic vinegar. Stir-fry until tender.

Scoop the cooked quinoa out of the rice cooker and add it into the wok. Stir to combine with the vegetables. Taste test and add more salt or seasoning if it needs it. Remove from heat. Drizzle with extra virgin olive oil and toss to fluff.

Serve immediately; or allow it to cool, then cover and refrigerate it to eat as a salad. before serving it cold, taste test again and adjust seasonings.

Serves 4.

Gluten-Free Goddess Coconut Cake

Let. Us. Eat. Cake. My husband's latest birthday marked another spin around the wheel of time. And yes, I baked a cake. And as I stirred the batter and scooped it into cake pans, I thought about the other cakes I have baked for him. The chocolate cake in our first year of marriage. Children beneath our roof. Blue balloons and candles. The newness of each others' dreams. The shine of our ideas. The belief in what was possible. We've shared twenty-eight of his birthdays now. And the single constant through these twenty-eight years is change. Change has woven its intricate design deep inside our marriage, our thirteen different living spaces in seven different states, our evolving work as artists and writers, our sons' own ever-changing lives. There isn't a piece of our life together that has not been burnished by change. I asked my husband what he felt about this birthday, if anything. He said at first he didn't feel anything about it. That is was just ...

Coconut Split Pea Soup

Stormy weather comfort food.  Temps have plunged to zero here in New England. Oh, well. Perhaps I shouldn't exaggerate. Okay. It was 1 degree above zero. One. As in uno. As in eins. As in une. Translation? COLD. AKA soup weather. So I whipped up a wintry weather comfort food favorite. A creamy and delicious split pea soup. That just so happens to be gluten-free. Meat-free. Dairy-free. My secret? Coconut milk, darling. And a dash of spicy jalapeños. It was lip-smacking tasty. Trust me. You won't miss the ham hock. Stay safe and warm out there!  Karina xo

Gluten-Free Goddess Irish Soda Buns

Irish Soda Bread Inspired Rolls- er Buns. Or whatever.   Spring is poised to sprout. I just know it. Despite the frigid fingers of wind that unwrap your scarf and creep-sneak down your spine. Despite the tawny, snow nourished grass that twists between wind blown twigs and scattered crows pecking at patches of silvered oak leaves at the edge of the winter swept woods. Despite the wild and wooly roar of the coming March lion--- you can feel it. Right? Green is coming. Snow drops are sprouting! I spied some yesterday- swaying all jaunty and hopeful in the spring smelling air. So Happy (almost- it's coming- hold on) Spring! And to tempt you into celebrating this weekend, here is an Irish soda bread inspired bun-roll recipe to try. Bun, roll, mini-bread- whatever you call these tender tea worthy babies, one thing is for sure. They're delicious. If you are more inclined to bake a loaf rather than buns, see these Irish Soda Breads for inspiration. Karina xox

Gluten-Free Goddess Irish Soda Bread (and baking tips)

The mother of invention? If I call this new gluten-free bread an Irish soda bread, traditionalists will snicker. Raisins are not traditional in a "true" Irish soda bread, you see (if a soda bread has raisins in it, it's called Spotted Dog in the Emerald Isle, or so I'm told).  I never knew this, growing up on the salt-kissed clapboard villages of the Connecticut shore. I was blithely ignorant of this quaint canine moniker, despite a streak of Irish blood. We ate more pierogi and kielbasa in our culturally eclectic house than Irish soda bread and tea. So my own first home baked Irish soda bread had raisins in it.  And, actually, come to think of it, why the heck not?  When it comes to traditions, I wiggle and chafe beneath constraint and "should" like an itchy Catholic school girl with pinching new Easter shoes gazing out the window at the unsettled spring sky. I admire traditions. At least in theory. In an abstract way. Experimenting, though, is more int...

Karina's Irish Beef Stew

Beef Stew. Who knew? This recipe is a surprise- even to me. You wouldn't expect a life-long Vegetarian Goddess to create and fall in love with an Irish beef stew recipe, but that is precisely what happened this weekend.  Shocking?  Tell me about it. Just when you think you've got your life all figured out, and your tastes and preferences arranged in a tidy packet of self-identification and veggie piety- all Hades breaks loose. Celiac. Food allergies. Broken hip. Suddenly, your food-world view is quite literally flipped on its leafy little head. So, after my orthopedic surgeon's instructions to "eat lots of animal protein" to support the healing of my hip fracture, my husband and I decided to try our collective hands at making our very first Irish beef stew together. The first beef stew of our marriage. And what did I do as I spooned the first taste into my hesitant, quivering lips? Gentle Reader, I swooned like ...

Gluten-Free Fudge Brownies - Our New Favorite Recipe

Because these fudgy-good gems are easy to make. No xanthan gum or weird ingredients. Just rich chocolate goodness. What better way to ring in the Season? Not to mention, a brand new year? So go.
