Recipes for a Vegan Cinco de Mayo

In the spirit of fiesta, I thought I would gather some of my favorite New Mexican inspired vegan recipes to celebrate Cinco de Mayo. Because if you're looking for a carnitas recipe, or how to stuff a spicy beef burrito, there are food blogs galore that feature carne autentico. Just browse Food Blog Search. But if you're a vegetarian, or a gluten-free vegan, have I got some recipes for you, Babycakes.
For a simple bite, try making a spicy cornbread and serving it grilled, with my savory Roasted Yellow Tomato Salsa. One of my fave cornbread recipes is this vegan Skillet Cornbread with Green Chiles. And if you like a juicier salsa, this easy Roasted Vegetable Salsa can be as fiery as you like. Serve it with these Sweet Potato Shoestring Fries with Santa Fe seasonings.
Guacamole and chips are a must with margaritas. Try Joey's Kicked Up Rockin' Guac recipe with tomatillos and these crunchy Brown Rice Tortilla Chips for starters. And for a non-traditional appetizer this Jalapeno Lime Hummus is muy tasty (it's also a complementary protein for dishes with rice and beans).
If it's still a bit chilly or rainy where you are, some Mexican Pumpkin Soup or Santa Fe Pumpkin Chowder will warm you up.
My favorite Mexican comfort food (and party food) are these Sweet Potato Black Bean Enchiladas. You can sprinkle vegan cheese on the top or just skip it entirely (we don't miss the cheese). If you're lucky enough to have access to roasted green chiles (past season now, but some stores carry Autumn Roasted Green Chiles by Bueno foods- look in the frozen section) try making this vegan Roasted Green Chile Sauce. Spoon it on enchiladas, polenta, or even simple rice and beans.
Vegan side dishes include New Mexican Calabasitas and a make as spicy or as mild as you like it Santa Fe Brown Rice Bake. Sweet Potato Shoestring Fries with Santa Fe seasonings.
Vegan sweets for Cinco de Mayo include this cinnamon laced Vegan Mexican Chocolate Cake, an egg-free dairy-free soy-free Flourless Chocolate Cake (with a secret ingredient), citrusy and light Orange Creme Cupcakes, and my dairy-free Banana Lime Ice Scream.

Just finished making the orange cupcakes and big banana muffins (a mothers day test run)...Yummy. Any ideas for a sweet bread I can make for french toast?

Cinco de Mayo is one of my favorite holidays! I love mexican food! You've got some great recipes here.
One question though:
I was thinking of making one of your flourless chocolate cakes, but coffee in any shape/form makes me pretty sick. What would your recommend as a substitution which would still (mostly) maintain the flavor/texture? Thanks!

Steph- I would use plain hot water. Weird, but it produces a lighter, better batter than adding non-dairy milk.

Oh, I see many of my favorites here. I do love those black bean sweet potato enchiladas. That's a recipe riff with so much creative potential. And I love the Santa Fe brown rice bake, too. I want to give a shout out for yeasted quinoa cornbread as well. That is absolutely awesome. I'm still looking forward to trying those orange creme cupcakes, too. My son visits next week. Maybe that will be the ticket.
And, I hope potential house buyers see this photo of your kitchen. It's just beautiful. How could they resist?
