Gluten-Free Goddess blog has made it into the finals for The Whole Foods Market Food Blogger Budget Recipe Challenge. The recipe? A personal (and family) favorite- my Sweet Potato Black Bean Enchiladas. Why am I mentioning this? Because, Dear Reader, if you visit and vote for my vegetarian enchilada recipe, you just might win a $500 Whole Foods Gift Card- and other prizes!

This audience sweepstakes will run from today through Wednesday, October 8th. Anyone who posts a comment on any of the contest recipes (at the Whole Foods website only) will be automatically entered to win a $500 gift card or other prizes. ReplyDeletegreat dish! I voted for it at Whole Foods too - I am so impressed that you use real green chiles. My husband grew up in New Mexico and is often disappointed by green chile sauce made with tomatillos.

This is a first for me - I love that I found your blog - these recipes look GREAT! I would have never put sweet potatoes in an Enchilada...interesting enough to try it!

ReplyDeleteHey Karina - I keep meaning to try this recipe but now that it is green chile season, I think I will pick some fresh roasted chile at the Corrales Grower's Market on Sunday. And sweet potatoes - I have recently fallen in love with them so we definitely need to make this next week! And then maybe the week after for all our balloon fiesta guests...introduce their midwestern tongues to NM green chile.

ReplyDeleteThese were very tasty! But I abandoned the recipe and added more sweet potatoes -- to which my husband commented were too many! haha! The green chile sauce wasn't my thing, so I had left it on the side. The burritos were good without them, but they became super crunchy on the sides. THANK YOU!

This is definitely a favorite of mine, too. We made it last night after a *very* hectic evening, and it was the perfect comfort dish to settle down to with a glass of wine.
