Gluten-Free Italian Recipes

Who doesn't love Italian food? It's a staple in my house. And lucky for those of us with celiac disease, gluten-free pasta is not only widely available now- but truly delicious. My favorite brand of gluten-free spaghetti, spirals, shells and lasagna is Tinkyada. If you cannot find Tinkyada in your local store, you can order it in bulk at Amazon here and save (free shipping!).

Love your blog! We've been using Pamela's Wheat-Free Bread mix in our Breadman for a while and all of our GF friends are doing the same--thank you!!! Just wanted to know if you've ever tried making pizza with it. Would you let it rise on the dough cycle, then spread out for pizza?

Nancy- Yes, I think Pamela's Bread Mix would be wonderful as pizza. Set your machine for the dough cycle (the machine can do all the work).

You can then scoop out the dough and spread it on a baking sheet or pizza pan to rise (I use wet hands to smooth it). Then bake in a hot oven- at least 375 degrees F. I'd pre-bake the crust for 5 to 7 minutes without toppings, then add the topping and bake till piping hot.

As always keep an eye on it- and factor in your own oven's tendencies/climate/etc.
