I just wanted to share this great crunchy peanut cookie recipe I found...it seems crunchy gluten free cookie is an oxy moron...but I found a recipe!
Peanut cookies.
4oz/100g brown sugar
2oz/50g white sugar
3oz/75g hard margarine
2 oz/ 50g crunchy peanut butter
1 egg
2oz/50g rice flour
1 oz/ 25g cornflour
(or I used 75g of GF bean flour mix)
1oz/25g ground peanuts (or almonds)
2oz/50g cornmeal
1/2 tspn baking soda
1/4 tspn cream of tartar
A good handful of your favourite nuts and choc chips
Cream together the sugars, butter and peanut butter, then beat in the egg. Mix all the dry ingredients, together with the chopped nuts. Fold the mixed dry ingredients into the butter mixture. Use walnut sized lumps of dough, flattened slightly, on a parchment lined baking sheet(- better than greased for removing later!)
Bake at 350'F/180'C of gas mark 4 for 12-15 minutes, or until lightly browned. Cool on a wire rack.
Good for cheesecake base too.

Hi. My soon to be 3 year old son has allergies to soy, nut, egg and wheat (trying to keep him G.F. too). I am having a bugger of a time finding a good birthday cake recipe. Can you please help me? His birthday is in 4 weeks and I'm at a loss. everything I've tried is either gross or has something in it he reacts too.
