Here's an easy fresh vegetable soup recipe you'll love.

It's still soup weather here in northern New Mexico, so certain individuals lugged out their Crock Pot this week and pondered the gentle, slow art of vegetarian potage. This new soup recipe is fresh tasting and full of flavor, kicked up with spicy green chiles a generous squeeze of lime.

Fresh Vegetable Soup Recipe with Lime

By the time the March winds howl I am craving a lighter, leaner soup chock full of fresh vegetables and laced with citrus. I added plenty of hot red pepper flakes to jazz it up, too. Sometimes a flexitarian goddess just needs to spice things up a little, vegan style. Bland is so old school.


Extra virgin olive oil
1 medium red onion, diced
4 cloves fresh garlic, chopped

2 medium zucchini squash, trimmed, sliced into coins, and quartered
2 medium carrots, chopped
1 heaping cup thinly shredded cabbage- or cole slaw mix
2 14-oz cans Muir Glen fire roasted tomatoes with juice
1/2 cup chopped roasted green chiles- mild or hot, to taste
2-3 cups light GF broth, as needed
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil or cilantro
Sea salt and fresh ground pepper, to taste
Hot red chile pepper flakes, to taste
A dab of organic raw agave nectar, to taste (this cuts the acid of the tomatoes)
Juice of 1 fresh lime
Lime slices for garnish


Drizzle a tablespoon or two of olive oil in in the bottom of a Crock Pot or slow cooker and toss in the chopped garlic, red onion and fresh vegetables. Add the diced tomatoes and roasted green chiles. Stir to mix.

Pour in enough broth to cover the veggies by an inch of liquid. Season with fresh herbs, sea salt, ground pepper, and red pepper flakes (to taste- these are hot).

Cover and cook according to your manufacturer's instructions for vegetable soup.

Taste test for flavor adjustments and add a drizzle of agave and the juice of a fresh lime; taste, stir and warm through.

Serve with a slice of my Sweet Potato Cornbread.

Serves four.


Add a can of drained northern white beans or chick peas for protein.

Make this easy soup on the stove top using a large soup pot. Follow the basic directions above; cover and simmer until the veggies are tender, about 25 minutes.

We had a recent power outage due to a ice storm. Our house was one of the very few still working... many friends and family piled into my warm home for the evening, even a local piano teacher had her lessons in our home that night... I whipped up this soup (in mass!) and a few cranberry crisps later and fun flowed...while piano lessons played in a far off room.... People gathered around in the kitchen with your bowls of soup laughing and not caring about the icy tundra outside!

This sounds great right now. I am craving lime like none other! And quinoa...I wonder if this would be good with some cooked quinoa stirred in...

Anyway, do you think it's essential to use the fresh herbs or could I sub dried ones (do I alter the amounts)?

~M, I think some cooked quinoa served as a scoop into the bowl before you ladle in the soup would be fabulous. Say, a half a cup cooked quinoa, maybe? Dried herbs are fine- just taste for seasoning adjustments. xox Karina

This looks perfect! I'm preparing a meal for a family who eats GF this weekend. The dad has MS and is on a GF, dairy, legume, egg, celery and lettuce free diet! I have been a little overwhelmed! Though we do eat healthy, we eat all of the above!
