Pomegranate Glazed Green Beans & Portobellos
The days may be getting longer but for this casita-bound goddess (I'm not one to strap on skis or skates or hurtle downhill on a toboggan, Darling) each successive chilly day invades my bookworm bones a little deeper. I get restless. I get itchy.

So after a leg stretching day in Santa Fe doing errands and getting a total pick-me-up shake-me-loose hair cut, Steve and I headed back to our quiet casita by the mesa with a bag of fresh green beans and portobellos and a bottle of Trader Joe's Pomegranate Glaze. Something new to try.
Just for fun.
Pomegranate Glazed Green Beans and Portobellos Recipe
When you are craving a fresh and quick side dish, this snappy and tart combo of flavors fits the bill.Ingredients:
3 cups green beans, trimmed
1 large or 2 medium portobello mushrooms, cut into chunks
Extra virgin olive oil, to taste
Sea salt and freshly ground pepper
Trader Joe's Pomegranate Glaze -or balsamic vinegar- to taste
Instructions:
Heat the olive oil in a large skillet over medium high heat and add in the green beans and portobellos. Season with salt and pepper, to taste. Shake and cook until the veggies are crisp-tender. Pour the Pomegranate Glaze (enough to coat lightly) over the green beans and mushrooms, and toss to coat. Lower the heat to medium and cook until tender - or to your liking.
This simple side dish cozies up to a lot of flavors. Try pairing it with my Brown Sugar Turkey Meatloaf, Pineapple Salmon Brown Rice Bake, Italian Meatballs, or my Pinon Brown Rice Bake.
Serves 4.
