Big Easy Chili- and some super recipes

I'm back from our jaunt to Los Angeles- an impromptu trip that was over far too quickly (where does time fly to, by the way? They say time flies but I always want to know, where?). I have a handful of juicy details to report, and I will, in an upcoming post, but today is apparently sort of a big deal.

There's a game goin' on? And rumor has it, today's a big chili day. So I am reprising a big easy chili recipe and sharing a link to Whole Foods- for healthy and tasty vegan and gluten-free menu ideas and recipes for pot lucks and Super Bowl parties. Me?

Karina's Big Easy Gluten-Free Chili Recipe


This is a doubly good soup. First, as the name implies, it's super easy. Second, it's spiked with organic spicy andouille sausage, hence the nod in the title to its Cajun roots. If you prefer an alternative sausage or vegan weiner, Cher, be my guest. Add 'em in.

I made this recipe in the Crock Pot- which makes it perfect for a party or an informal get-together- but you could also toss it all in a heavy soup pot, cover and simmer for a hour (you know, to let all the sexy spices and flavors co-mingle). Then pass out the spoons and banana cornbread.

Ingredients:

2 1/2 cups chicken or vegan broth - and more, to thin, if needed
2 14-oz.cans Muir Glen Fire Roasted Tomatoes
5 cloves garlic, chopped
1 red onion, diced
2 fresh jalapeños, seeded, stemmed, diced- or 2 tablespoons chopped pickled jalapeños
2 15-oz. cans red kidney beans, rinsed, drained
2 15-oz. can pinto or black beans, rinsed, drained
1 teaspoon ground cumin, or to taste
1 teaspoon chipotle, cayenne, or hot chili powder, to taste
1 teaspoon Old Bay Seasoning
1 tablespoon apple cider vinegar
1 tablespoon gluten-free Worcestershire sauce or molasses
4 andouille sausages, sliced (we used Applegate Farms GF/CF Organic Skinless Turkey Andouille)
1 teaspoon brown sugar or organic raw agave

Instructions (the easy part):

Combine all of the ingredients in a slow cooker and cook on low or high according to the manufacturer’s instruction for your make and model.

Before serving, stir in:

Pinch of sea salt
Fresh ground black pepper
Fresh chopped cilantro, to taste

Taste for seasoning adjustments.

Serve with a spoonful of sour cream or plain non-dairy yogurt and cilantro sprigs for garnish.

Optional garnish:

Sliced scallions (spring onions).

We served this hearty soup with grilled slices of Sweet Banana Corn Cake.

Serves 6.

    The picture makes my mouth water! I can't get fresh jalapenos though (and I don't believe in the canned ones; I had them once and couldn't recognize the chile I love), and could you explain what andouille sausage is so I can come up with a substitute?

    Also, I'd love you to say more about Worcestershire sauce and what to do with it. I have a bottle at home but only used it once, in a tuna pasta recipe, and I thought the sweetness was awful :( Should one just use less?

  2. I want a cobalt blue crock pot. (Ok, I confess I have 4 or 5 perfectly good ones already, but they aren't cobalt blue!) This sounds great. Guess I'll have to use one of my boringly brown or white crock pots.

    Can you get jarred jalapenos? They aren't half bad cooked in a recipe like this. Otherwise, use any kind of pepper you can find.

    Andouille is a Cajun spiced sausage, popular in Southern cooking. It is dense and spicy. Very tasty. It adds a spicy-smoky taste to soups and chili.

    Worcestershire is a particular taste - kind of a jazzed up fish sauce, a combo of anchovies and tamarind, cloves, and other spices. I use it as a secret ingredient often - just a dash or two - to give broths or soups an extra *something*. I can see how it would overwhelm pasta - unless you used it in a rich putanesca sauce with lots of olives.

    By the way, I've been wanting to tell you that my great-grandmother was from Krakow. ;-)

  5. hi karina - i had wondered about you and onions! mainly because i notice these things with own dislike of them (a texture thing mostly). but it makes it easier for me to make your recipes!

  6. What a great idea to cook this in a crock pot - I always forget about mine (maybe because it's not cobalt blue?) and this sounds liek a perfect excuse to break it out. I was reading thorough your past posts and I just have to say that I love how you've truly embraced your new town and home complete with all of it its food and culture. I hope I am able to do the same (and with such grace!) when I make my move to Hawaii this Spring.

  8. What a great thing! And a gorgeous photo, the red and the white and the green. What's better than a warming Crock-Pot soup with sausages in it? Tonight I made a sausage, white bean, and escarole stew thingee -- I'll blog about it soon. It strikes me as similar in nature to this one -- well, except that it takes only about 30-40 minutes to make, but it tasted like it had simmered for hours. Thanks for sharing this.

    By the way, I don't tolerate onions well, either, so I use leeks instead. Just a 2-inch piece, sliced thinly, and I get that little bit of flavor without the bad gut.

    I offer you gratitude for sharing your story and your delicious recipes with the world. You are inspiring. I have been telling anyone who will listen about your site and trying out so many of your amazing dishes. I love all that I've tried so far!

    My two oldest daughters (ages 8 and 6) have confirmed celiac and my youngest, at 3, is still unconfirmed, but has eaten gluten free for over a year and a half.
    I read your post about getting tested for other allergies. I know you aren't a doctor, but you have so much knowledge and experience that I wanted to ask you what you thought I should have my daughter's doctors to test for in regards to other allergies. We're off to the allergist soon mainly because my oldest is developing additionally sensitivities (she can no longer eat raw carrots or sugar snap peas). I think they skin test first.

    Thank you for any insight you might be able to offer. And if you can't, no worries. I truly appreciate all of the recipes and other information you provide on your site.

  22. This recipe is fantastic! I love those fire roasted tomatoes, the black beans, and adding Old Bay ... now you're really talking East Coast when you add Old Bay! (Speaking of East Coast, silly me ... I thought you meant Venice Beach, FL. LOL) Cobalt Blue crock pot?! They will be amazed how many more they sell than the mundane white (not to mention those very old avocado green and orange ones!!)

    The Whole Foods mentions are fantastic!

    I know ciders are always a little weary and debated in the GF world. You may already know this, but I just found out that Woodchuck Ciders are gluten-free!     Hi Lisa- As you mentioned, I'm not a doctor. My personal opinion based on experience is that it's wise to get tested at least for the top 8 allergies- milk, wheat, eggs, soy, tree nuts, fish, shellfish, peanuts. 50 % of celiacs are allergic to milk proteins.

    I did a blood test; as I'm not too sure that food allergies are accurately dx'ed with skin testing- but ask your doctor. Good luck! And thank you for your kind words.

  26. I made this tonight and it was delish! It was very spicy though. Next time I will cut back on one jalapeno and on the cayenne pepper to make it more kid friendly. Personally, I loved it as is! I made it in a soup pot and simmered for 1 hour as suggested. Served with gluten free corn bread. Thanks for this recipe!

  27. Karina, your Big Easy Chili and your Banana Corn Cake was our 2011 New Year's Day Lunch. Instead of the Red Beans and Black Beans you have in your recipe, we used Black Eye Peas. This was the only way to get my guys to eat their Black Eye Peas for New Year's Good Luck. Thanks so much for these delicious recipes!
