Meet Your Cook

Karina Allrich


I cook therefore I eat.

Somewhere in between painting raw canvas the color of November snow and knocking over a mug of tea onto a stack of favorite books by the bed, and in between listening to the crows predict the coming rain after hanging wet baseball shirts on a cracked crooked fence by a garden that now belongs to someone else, I fell in love with an artist who is now writing scripts and he adopted my two sons.

And somewhere in between kneading bread dough by an open window and rolling up newspapers with ink blackened hands just before dawn and scrubbing dishes with soap that smelled like a school teacher's apple and stringing words into looping curvy sentences, I stirred my share of soups and cake batter and wrote a cookbook and got sick. I gave up gluten and started a blog. And four years later I am still at it, writing recipes and posing food, bouncing daylight onto cupcakes.

In these four years I have moved my kitchen twice, packing up pots and favorite wooden spoons, relocating from the Cape Cod shore to a sun-baked mesa in Ojo Caliente, only to discover my love for the ocean runs tenacious and deep. So I sold off my furniture. Sold the New Mexico casita. Donated clothes and books and dishes. Now I rent an apartment in Santa Monica four blocks from the Pacific Ocean.

In between the farmers' markets I walk the beach, edit scripts and dream up recipes, meeting my sons for tacos or coffee, movies or shoe shopping. In between I remain expectant, curious, and fed by my readers.




Itinerary

After three years of living in rural New Mexico, Karina and her husband Steve Allrich (artist and screenwriterare moving to have moved to Santa Monica, CA. Sharing the same city once again with their two sons- Colin (aka Slighter) and up-and-coming screenwriter Alex Allrich- will no doubt provide much creative and culinary inspiration (not to mention, increased opportunities for margarita fueled movie nights and spirited conversation).

Ah, now I fully understand why I found your blog first and why I fell such a connection. You described in almost the same words as I use how I feel about food, cooking and living. We have other things in common. I also paint and have taken over my college son's bedroom as a studio and we are planning a move to CA when my youngest graduates HS. We're headed there next month to start looking into properties. I really love what you wrote and I wonder how you have time to do all the many things you do. I suspect you need little sleep. Thank you for sharing yourself, your passions and gifts and talents with everyone. You have helped so many people feel safe in a very frightening situation. You have also helped so many make our days delicious. If you have days where you're tired and just don't feel like giving, please remember how much it means to us who receive.

I love reading your posts and exploring your recipes, and always click over to your site when you post a new one. For a while I was gf and cf, but I realized that I couldn't do the grain bit, and have been feeling much better without them (I envy that you can, I have to say.) I followed your exploration of South Beach with interest, too. But anyway, I clicked over to have a look at your paintings, which looked like old friends to me, and noticed you studied w/ William Christenberry at the Corcoran. I did, too! Let's see, that was back around 1987ish+. Do you remember this one? "Take something. Do something to it. Do something to it again. And again." --or something like that, which he attributed to Hans Hoffmann. And he other adage about fixing a faltering painting by destroying one's favorite part? Oh, he was fabulous. Cheers to you!

What a beautiful post! And I couldn't agree more--I especially loved the part about cooking with the seasons. I think of cooking (and growing food) as a kind of alchemy, too, that both prepares, enriches and nourishes me for my other creative pursuits. And eating right is literally a matter of life and death for me, as it is the one thing that controls the downward spiral of MS for me. I love the fun creative nature of your blog, which celebrates the sensual beauty of food so well and inspires me to find recipes I can adapt to lower fat, for my own purposes, but enjoy cooking and baking free of wheat gluten and dairy, which I also need. Thank you for sharing some of yourself with us here, and thank you for your amazing and generous work on this blog. I know we'll all look forward to future developments as they unfold!

I recently found your blog--quite fortuitously in fact. I had been depressed about finding out after 12 years of eating a certain allergy free way, that I still wasn't getting it all right. Or that I had in fact not been good to myself and had overdone certain foods--like rice--so much that I had made myself newly allergic to them. But you helped me through the 90 days of elimination and now I am happily trying to add in foods again using many of your ideas and recipes. We almost have the same allergies, so it's refreshing not to have to alter a recipe much for a change.

Thanks for offering a delicious and often decadent way to live happily with foods!

I made a very delicious curried butternut squash and apple soup the other night. No recipe, just tried what I thought would work...and it did! Thanks also to my trusty immersion blender, lol!

I discovered your blog years ago when I was looking for inspiration for an enchilada recipe. I already had a freezer full of Bueno (frozen NM chile in margarine-like tubs) from my last visit to Taos, so I felt an immediate connection to your passion for chile. This San Francisco guy (with nary a food allergy) has been so influenced by you. You not only gave me a few dishes I claim as my own (A Seductive Pasta is a top-tier, no-chile favorite), you inspired me to wing dinners with what I've got on hand - and I'm a better cook for it. People tell me I'm great in the kitchen. I agree, but I doubt that'd be true without you. Cheers.

Hmm...and note in my excitement that I typed "Katrina" instead of "Karina". I put the blame on one of the kids--they were clamoring for baby roasted potatoes with garlic, thyme, and olive oil for dinner. I do apologize!

And yes, the kids did get their potatoes (with steak and sugar snap peas).

A lovely post, Karina. I love when you share a bit of yourself so this one is like hitting the jackpot. Your philosophy comes through in all your posts and recipes. And, while I wouldn't wish multiple food allergies on anyone, we certainly benefit from your need to cook allergen free and your devotion to cooking. I am already gluten free, but also getting reading to go dairy free and sugar free. (I've actually done this before for 6 months, but now see I need to do it again ... the dairy part most likely forever.) So I will use your recipes more than ever now! :-)

Celiac and food allergies run in my family. My uncle has celiac, my mother has been sick for 4 years (with multiple things including celiac) thus she is on a strict diet and my brother (I'm pretty sure he has celiac also) has gone gluten free too. So I am very familiar with cooking for people who can't eat gluten, sugar, milk, soy, etc. I enjoy the challenge, and yes it is a challenge. I like your site because even though I don't have to eat gluten free food (I take after my dad's side) I do eat as much gluten free stuff as possible. Thanks for making this site for people like me who really need it. :-) Believe me we greatly appreciate it!

I was still getting recipes from Allrecipes (alot of people just dont get GF right!) and then experimentng myself. Then i found your blog. I love it so much. I'm in Los Angeles and I see a gastroenterologist at Cedars-Sinai - her name is Dr. Raena Olsen and she is great - very knowledgable and aware and helped me in a very short amount of time after years of looking for answers. I just wanted to thank you for sharing these recipes and your philosophy/outlook. I was recently diagnosed with Meniere's disease and part of the ongoing treatment is to eliminate any allergens and just terrible food stuffs in general, from my diet. I have been a vegetarian for 10+years and was forced to start cutting out dairy, gluten, MSG, etc and I was terrified and had no idea what I was going to eat.
But, I found your blog and it opened a whole new view of what I was being 'faced' with. Thanks to these recipes and your philosophy I no longer fear the ideas of gluten free/dairy free, etc...
I've also found a love of cooking that I haven't been able to express in years.

If a GF bread recipe (without a bread machine) doesn't call for xanthum or guar gum, is it okay to add a little (around the same amount that is usually added to bread recipes)? Is this a good idea?

Danielle- I have used Gluten-Free Pantry's Chocolate Cake Mix- it was called "Danielle's" mix years ago. Fortuitous? It's quite good. There are several mixes out there now- so compare ingredients to see which one appeals to you (rice flour vs bean flour, for example).

Dastardly Muffin- Gluten-free bread without any xanthan gum is going to be dry and crumbly. Does it compensate with extra egg whites? Or something else, like flax gel?

I add 2 teaspoons of xanthan gum to my bread recipes. I also find adding a tablespoon of honey helps keep it moist. Good luck!

I'm new to this site and I just have to say that you are amazing!! You are like the allergy free baking queen!! I myself bake alot and am always trying to make good tasting gf/df/ef/nf/sf recipes. Yours look fantastic and I can't wait to get started!

My question: I am trying to create a yummy, light, fluffy gf white cake (one I could use for birthdays, weddings etc...) but can't seem to find a recipe. I've adapted several of mine, but they always come out just 'OK', but I need it to come out 'really, really good' not just 'OK'. It has to be sellable, so it can't be a big white brick! :) Any thoughts? Is it even possible to make I white gf cake come out really good?? Thanks!!

how i enjoy following your passionate life across this country. i ended up here looking for ways to control my rheumatoid arthritis through diet (hope someday to go off nasty meds)and eliminating gluten (along with dairy)helps me tremendously. i own your Moonrise Near Skaket & a smaller beauty done by Steve (sorry don't know the name). I also have been blessed with two sons that have taught me there is no one right way to live your life and success is defined by the individual not by society. please keep this creativity pouring out of you, i'll take it in whatever form you choose to give it...oil on a canvas or oil in pan.

I was diagnosed with Crohn's Disease last April. Diet has been the single most significant factor in keeping my symptoms in check, so I take it very seriously (while still having fun - cuz who likes food with no fun?) I have been gluten-free for over a year now (though admittedly not with the vigilance of a true Celiac) and must say that you have made my life sweeter, crunchier, and just plain lovelier many a time! Go-to carrot cake recipe? Yours FOR SURE! (Though I can't have coconut, the recipe works wonderfully with more shredded carrot. Speaking of coconut, Babycakes NYC may have made me ill on New Year’s Eve, but I sure don’t regret trying their cupcakes and brownie bites during my stay in New York). Despite my best dietary and lifestyle efforts, I am flaring up again. Such is the fate of every Crohnie; you restrict, and you take care and yet, when an uninvited wave of stress hits your shores (which it inevitably does), you’re back to the beginning, swollen innards and all. But returning to the topic of good food: since I’m feeling ill, my appetite is low, low, low, but I have somehow maintained my obsession with looking for recipes, but above all, enticing photos of food. Enter: your glorious maple-frosted pumpkin cake! Even though I won’t be making it any time soon, let alone eating a piece, you have succeeded, once again, in making my life lovelier just by having its mug shot on your website. Hi there, I just found your website and the recipes look delightful. I wanted to let you know that it's a bit challenging for a new reader to look back at your old posts. For one, I don't see an 'archive' on your side bar, so I have to keep going 'older post' over and over.

And also, because it only shows part of each post and them requires a 'read more' click to read the whole post I can't skim through your loads of delightful posts quickly and easily.

Just thought I'd let you know that I'd love to seen an 'archive' on your side bar and also see entire posts rather than 'read more' link. As a gf foodie and bloggie, this would all me the best bang for my buck in my limited blog reading time.

Hi Ann- Rather than an archive list, I've created a navigation bar at the very top with my two most popular recipe indexes: GFCF and Vegan - Vegetarian. You'll also find a helpful FAQ link, How to Go Gluten-Free, Bread Machine Tips, etc.

In the side bars you can also easily browse recipes by title in several recipe collections, an index by recipe type (bread, dessert, soup etc), and my seasonal recipe favorites. There's also g-free baking tips and how to posts.

And last but not least, try the search box at the top for a specific ingredient or dish.

I have to tell you after 6 years of agonizing hell with my 6 year old son being so sick and no one listening I finally found someone who would. He is dairy free and G free. I have been having the hardest time with processing all the info, finding a way to set up a menu and grocery list. I have 7 kids and found myself raising thm alone 2 1/2 years ago, my income is limited to what I make. But with sick kids work has been a mess. Thank you so much for this site, it is an answer to prayers. I am able to look through and find meals that sounds good, that are and feed my family! Without all the ewwww its icky type view, I have been able to open my mind and am learning to enjoy the foods. It is hard to change the way you think and bake, I have always been a do it from scratch type person, this rocked my world. I am finding more confidence with your site. Getting an answer to my sons health problems was part of the battle, learning to feed him and keep him healthy was as hard. I cant make 2 meals and feed everyone separate, its to risky to have foods in home he cant eat so we all get the diet. I am suspecting more than him has a problem with Gluten, not as extreme as he is but others showing signs and improvements.Thank you for this site!

Hello- Great website and info. I am new to Gluten free baking- I am also not able to have potato- Are most of the bread and baking receipies potato free?

I know that Pamela's baking mixes are not potato free- and Its soo hard to find a MIX that is free of Potato- If your recipes are indeed potato free please let me know- I am a little overwhelmed by all the info.,... but Want to find some good standby's... I went to a G free bakery here in Ptown and it all looked so wonderful but they use potato starch as the binder...I'M thinking I could bake with Cornstarch instead? HELP!!:)

Hi Erin- Any of my baking recipes can easily be potato-free. Simply sub the potato starch with tapioca starch. Other subs include cornstarch and arrowroot starch.

Don't worry- you'll be fine! Read up on getting started with my posts on the FAQ page- especially before you plunge into g-free baking; and give your taste buds time to adjust.

I like Nielsen Massey Pure Madagascar Bourbon Vanilla- but I've also used Trader Joe's own brand Tahitian bourbon vanilla. It's a lovely rich vanilla.

Sonia, I've never been to Mexico, but I imagine you will be able to find fresh fish and vegetables, fruit, guacamole and corn tortillas. I would learn how to ask about wheat in Spanish.

I really love your blog. I found out that I was allergic to wheat, spelt, eggs (poultry but I was already vegetarian) and sensitive to milk about one and a half years ago. It's been a pretty ridiculous transition for me, being a college student, and now an Americorps VISTA volunteer.
Your recipes have really helped me develop my cooking and determine what works for me, which is great. I was wondering what you knew about weight loss associated with this kind of diet. I've lost about 25 pounds in the past year, and I wasn't overweight to begin with, so its starting to become a concern.

I just found your page, and I am the happiest little girl ever! I am or I should say not medically diagnosed with celiac disease, but I have suffered with the most painful migraines since I can remember, (even thinking and being told by my mother it was a part of being a girl...) and also having joing, bone pain. I recently (past 4 years gone to a migraine specialist to get help and I have been on medication after medication...and I researched gluten free diets associating with this ailment and decided to give it a go! (i thought what did i have to lose? My doctor had me try to go on rediculous diets that had me try everything else...that never helped...and i was about to lose my mind or at least run my head into a wall after 3 straight wks of a migraine.
It worked, and To my amazement, my Time Magazine Doctor of the Year,thought giving up gluten was "a silly idea" and "ill lose too much weight" being im only 4'10". I shouldnt follow crazy diets like that, is what he thought. haha. Its been years and Ill never go back!

I am thankful for your site because I really want to for the first time bake my own G free bread and all that! Thank You Thank You! you are a real person and you really know how to write a blog to your recipes that cligs to people. (im a recet journalism grad) and I really love this site. Thank you

Dear Karina -- a friend pointed me toward your website, since she knows that I cook gf things for my dad who diagnosed 5 years ago. Since we are blessedly allergy free (except for the gluten bit) and are all unabashedly anti-vegan (what, give up butter?), happy sugar and carb eating folks, and given that I've never heard of some of the products you use, can you give some reverse substituting tips? Specifically, that shortening you often use--just reg. veg shortening? I've got my eye on a couple of cookie recipes I think he would like. Yeah, sure it's a tough job but I'll have to taste test.

Hi Elizabeth- For baking substitutions in my recipes, you can use softened butter instead of vegan shortening, 2 large eggs instead of the Ener-G Egg Replacer, and milk instead of non-dairy milk (except when coconut milk is called for- very distinct and delicious- especially in soup). I started out baking gluten-free with butter and eggs. It works!

I love your blog so much. I stopped eating gluten almost two years ago and found out nine months ago I have multiple food allergies (the worst are wheat, eggs, and dairy). I love that many of your recipes are vegan and gluten free.

I know the feeling of being landlocked and feeling near the ocean is where you truly need to be.

Thank you from the bottom of my heart! I found out last year my 3-year old daughter is allergic to wheat, eggs, soy, and dairy. After eating nothing but rice, chicken, apples, and carrots for quite a while, I stumbled upon your Web site. What a difference it's made in our lives! We now enjoy baked goods again (among other yummy recipes you have). I'm in southern Colorado, too, so all the recipes are perfect for my altitude!
